Greca (moka pot)
The stovetop pot that makes strong, concentrated coffee.
- Ratio
- Basket full, level
- Grind
- Fine, not powder
- Time
- 4–5 min
The greca (moka pot) pushes hot water up through the coffee with steam pressure. It makes a strong, concentrated cup, good on its own or with milk. The secret is gentle heat.
You need
- A greca (any size; a 3-cup greca makes about 150 ml)
- Finely ground coffee, enough to fill the basket
Steps
- Fill the bottom with water up to just below the valve.
- Fill the basket with coffee, level it with your finger, and don’t press it down.
- Screw the top on firmly and set it on medium-low heat with the lid open.
- When the coffee starts to come out pale and sputtering, take it off the heat.
- Cool the base with a damp cloth to stop it, and serve.
Common mistakes
- High heat. It scorches the coffee and makes it harsh. Low and slow is better.
- Packing the coffee. It blocks the water and can make the pot hiss and spit.
- Letting it gurgle to the end. The last bit is the most bitter.
