Time

Cold brew steeps in cold water for hours instead of minutes. It comes out smooth, sweet and low in acidity, and it keeps for days in the fridge. Good for hot towns and for afternoons.

You need

  • A jar or jug with a lid
  • 100 g of coarsely ground coffee for 800 ml of cold, filtered water
  • A cloth filter or paper filter

Steps

  1. Put the coffee in the jar, add the cold water, and stir until all of it is wet.
  2. Cover and leave it in the fridge for 12–18 hours.
  3. Strain through the cloth or paper. Take your time: it filters slowly.
  4. This is a concentrate. Serve it with ice, mixed about half and half with water or milk.

Tips

  • Keeps up to a week in a closed jar in the fridge.
  • Longer than 18 hours starts to taste woody and flat.
  • Try it with a little panela syrup, or with milk and cinnamon.
